To preheat the Microwave Oven, press OVEN function once, turn the dial to 180 degrees celsius and then press START/SET to start preheating (once preheated, the oven will beep 3 times). Proceed to cut the avocados into small cubes and transfer them into a mixing bowl.

Add the red capsicum, red onion, garlic, tomatoes, juice of 1 lemon, 250g cottage cheese, 100g cheddar cheese, cumin and half of the coriander to the avocado. Mix everything well.

Fill the tortillas with the vegetable/cheese mixture and roll them into tubes. Place the filled tortillas in microwave safe dish.

Cover with tomato sauce and the rest of the grated cheddar cheese. Bake for 30 minutes until fully cooked. Spread the rest of the fresh cottage cheese on top, squeeze the juice of 1 lemon on top and sprinkle with the remaining coriander.
