Profiteroles

Cream puffs with whipped cream and chocolate sauce

Cooking: 20 minutes Total Time: 20 minutes Yields 20 - 15 Profiteroles

  • Milk 125 ml
  • Water 125 ml
  • Butter 100 g
  • Salt 5 g
  • Sugar 15 g
  • Flour 150 g
  • Eggs 4 `
  • Creme Patissiere (see recipe)
  • Chocolate Sauce, to finish 100 ml

Heat together the milk, water and butter. Once the butter has melted, mix in the salt, sugar and flour. Continue mixing thoroughly until a thick paste forms.

Transfer the thick mixture to another bowl and add the eggs one by one. Use a hand blender to fully incorporate all the ingredients. Transfer the mixture into a piping bag with a piping tip (size 8mm). Pipe circular florets onto a tray lined with baking powder.

Preheat the Microwave Oven by pressing OVEN once, turn the dial to 170 degrees celsius and press START/SET. Proceed to immerse your finger in water and use to flatten the tip of the pastry. Brush the pastry with egg wash and bake for 15 - 20 minutes or until fully set and golden in colour.

Once cool, gently break open the pastry and pipe in an adequate amount of Creme Patissiere. Close the pastry and assemble on a serving platter. Drizzle the profiteroles with Chocolate Sauce.

Top-Tip

To prevent the baking paper from moving around as you pipe the choux dough, use a bit of dough mixture to paste the corners of the baking paper onto the tray.
