Hot Cross Buns

Spiced, glazed fruit buns with pastry crosses

  • Yeast 1 tsp
  • Bread Flour 250 g
  • Salt 1 tsp
  • Powdered Milk 1 1/2 tbsp
  • Butter 25 g
  • Sugar 1 tbsp
  • Orange Rind 1 tbsp
  • Mixed Spice 1/2 tbsp
  • Water 130 ml
  • Egg, medium 1
  • Mixed Dried Fruits 50 g
  • Crosses
  • Flour 1/2 cup
  • Oil 2 tbsp
  • Glaze
  • Castor Sugar 3 tbsp
  • Milk 3 tbsp

Put the yeast into the yeast dispenser and add the rest of the ingredients into the bread pan in the order listed. Select the BREAD DOUGH MENU No. 9.

Remove the dough from the bread pan, divide into 6 pieces and roll into balls. Place the buns on a greased baking tray. Cover and leave them to rise in a warm place at 35 degrees celsius to 40 degrees celsius for 20 minutes or until doubled in size.

Prepare the mixture for the crosses by mixing the flour and oil into a bowl and adding a small amount of water to get a thick, stiff paste. Use a piping bag to draw the crosses onto the buns.

Prepare the glaze by boiling milk and sugar together until syrupy.

Bake the buns in a preheated oven at 200 degree celsius for 15 to 20 minutes or until golden brown. Spread the glaze over them.

Top-Tip

The dough of the crosses should have a thick consistency like mayonnaise, so that it sticks firmly to the bun.
