Christmas Pudding

Steamed Christmas Pudding with cinnamon and mixed fruits

6-8 Servings

  • Apple (peeled and grated) 1
  • Carrot (peeled and grated) 1
  • Orange (juice and rind) 1
  • Mixed Fruits 400 g
  • Brandy 45 ml
  • Black Treacle (Molasses) 15 ml
  • Self Rising Flour 50 g
  • Salt a Pinch
  • Cocoa 3 tsp
  • Nutmeg 1 tsp
  • Frozen Butter (grated) 100 g
  • Fresh Breadcrumbs 150 g
  • Mixed Peel 50 g
  • Flaked Almonds 50 g
  • Eggs (beaten) 2
  • Cinnamon 1 tsp

Grease a 1.3 Litre pudding basin or microwave safe bowl. In a separate bowl, combine apple and carrot. Cook on MICRO POWER HIGH for 5 minutes.

Once the apple and carrot mixture is cooked, use the hand blender to make a thick puree.

Stir in orange juice, rind and mixed fruits to the apple and carrot mixture. Cook on MICRO POWER HIGH for 2 minutes. Stir in brandy and treacle. Let the mixture rest for 5 minutes, then blend in the rest of the ingredients.

Press mixture into the greased bowl. Cover with grease-proof paper and cook on MICRO POWER HIGH for 4 minutes. Let the mixture rest for 5 minutes, then cook on MICRO POWER HIGH for another 2 minutes or until just firm. Remove cake from bowl and decorate with festive fruits and mint leaves.

Top-Tip

In pace of frozen butter, you may also use 100g of Suet (hard beef or mutton fat from around the loins or kidneys, traditionally used for puddings)
