Blinis (Thin Pancakes) and Smoked Salmon

Mini pancakes with smoked salmon, sour cream, salmon roe and micro greens

  • Blinis
  • Buckwheat Flour 70 g
  • Plain Flour 70 g
  • Baking Powder 1/3 tsp
  • Milk 175 ml
  • Dry Yeast 1/3 tsp
  • Egg (separated) 1
  • Butter (melted) 10 g
  • Topping
  • Sour Cream as desired
  • Smoked Salmon (sliced) as desired
  • Salmon Roe for Garnish
  • Micro Greens for Garnish

Sift the buckwheat, plain flour and baking powder together. Place the milk in the Microwave Oven and heat on MICRO POWER HIGH for 1 - 2 minutes. Add the warmed milk to the yeast. Add the egg yolk to the yeast and milk mixture.

Using the hand mixer, beat the egg white until it forms stiff peaks. Gently fold the egg white into the batter, keeping as much volume as possible.

Heat a non stick pan to make 12 small Blinis.

Garnish Blinis with sour cream, smoked salmon, salmon roe and micro greens.

Top-Tip

You may also use creme fraiche as an alternative to sour cream, and watercress instead of micro greens.
